Give Your Guest Something Wonderful

I am happy to notice a trend in months of late, a return to cakes being, well, a delicious dessert. For awhile I was alarmed to notice that it was all about the 'centerpiece' issue, with almost no concern for function. The function being, of course, that the cake will be eaten, and should be delicious. I always think of the guests eating their cake, the last thing served, and hopefully being so delighted that they completely forget how glorious it looked! Being food obsessed myself, I can relate to the idea of people revisiting their memories of that delicious piece of cake. I love it when people come into my shop and tell me that they had a piece of cake I made and can't quit thinking about it!! That's what I'm talking about.

So you're getting married, and you want a wedding cake. I always think a good place to start is asking people, friends and wedding professionals if they know (of) anyone. Photographers, DJ's, florists and caterers attend a lot of weddings (on the periphery , of course) and they will usually have preferences. If you're of marrying age, you also probably have friends and friends of friends who have either been married lately,, or been to weddings. The next thing to do is to try some cake from your local bakers. Look at their portfolios. Try to match your style and taste to theirs. Definitely use a licensed bakery to avoid unnecessary problems.

The style choices for you cake can be almost overwhelming.

From simple to rustic to elegant to extravagant. It is good to "match" the cake, both in style and flavor, to your event. You can take suggestions for flavors, based on your menu, to be sure your meal is harmonious. Your style ideas can come from the dress and flowers or the venue where the reception is. It is always a good idea to make sure the cake looks 'at home' in its setting.

Decorating accoutrements vary widely. Your cake could be swathed in fresh flowers, or adorned with a single blossom on top. It can have the formal and beautiful effect of gum paste flowers (these often resemble porcelain ) or the more homey and traditional buttercream flowers.

It can have delicious and beautiful chocolate, white chocolate or marzipan flowers and decorations. Once you decide on your baker, talk to him or her about styles that suit your affair.

Be sure to remember that the cake

Part of the wedding should be fun. enjoy the process. Are you on a tight budget? No worries, plenty of options still exist. A wonderful and fun trend of late has been cupcakes, arranged on tiered stands. Another option to cut costs is a smaller tiered cake, with a backup sheet cake . Still another is a table of multiple cakes on stands of various heights and shapes-a visual feast for the eyes as the guests contemplate their dessert choices.

Give your guests something wonderful for dessert. They'll thank you for it later!
